There’s something incredibly comforting about a bowl of pasta — especially when it’s filled with earthy mushrooms and coated in a rich, velvety spinach cream. This indulgent dish brings together punchy seasonal flavours and a touch of elegance, perfect for your spring menu.

Our ‘Raw to Ready’ Mushroom Tortellini is a creamy, savoury celebration of simplicity done right.

1. Prep – Finely dice banana shallots (4023) and gently fry in butter (498) until soft and translucent.
2. Add – Add @truefoodsltd Golden Chicken Stock (33079) and bring to the boil.
3. Stir in the double cream (7032), reduce slightly, and season to taste.
4. Mix – In a separate pot, cook the Mixed Mushroom Tortellini (13214) @latuapasta in salted water for 6–8 minutes until al dente.
5. Cook – Add baby spinach to the cream sauce and cook until just wilted.
6. Drain – Drain the pasta and mix through the spinach cream. Finish with sliced spring onions (33177) and chopped chives (873).

There's something undeniably comforting about crispy, golden potatoes straight from the oven — especially when they’re seasonal Jersey Royals. This simple yet flavour-packed recipe brings out their naturally buttery taste, pairing it with the warmth of roasted garlic and the fragrant crunch of Garlic Maldon salt.

Celebrate the season’s best with our 'Raw to Ready' dish — a celebration of springtime spuds at their very best.

1. Prep - Boil the Jersey Royals (1657) in salted water for 10–15 minutes until tender. Drain and let cool slightly.
2. Press - Gently crush the potatoes
3. Prep - Heat oil in a roasting tray, add the potatoes, and season with Garlic Maldon salt (33270).
4. Cook - Roast for 20 minutes. Then add chopped garlic (28478) and toss well.
Roast for another 10 minutes until golden and crispy.
5. Plate - Finish with chopped flat-leaf parsley (338) and serve.
